Mini Treats

Spin off of s’mores bars; graham cracker crust filled with chocolate ganache, homemade caramel, and a lightly browned merengue

For these tiny treats, I crushed up graham crackers and then added melted butter and sugar and combined. The I placed some into miniature cupcake wrappers, pressing it firm. Then I poured a thick chocolate ganache, made form milk chocolate and cream, into the bottom of them. next, I poured caramel on top of the ganache. Finally, I piped merengue and put it in the oven to broil just until it was the perfect color brown.

Mini pumpkin pies topped with a cream cheese frosting

For these mini pumpkin pies, I took a small pumpkin, cut it in half, cleaned it, and put it in the oven for 45 minutes. The I took the pumpkin and scraped out the insides. I then used the pumpkin puree and added it to my pumpkin pie mix. Using the pie dough I had already made, I rolled it out and placed it in muffin tins, then I poured in the pumpkin pie mixture, and baked it. Once baked and cooled, I placed a small amount of cream cheese frosting on top, sprinkled with cinnamon.
